These Hummus Hempseed Avocado Boats are a delicious and healthy snack.
- For the salad:
- 1/2 cup diced tomatoes
- 3/4 cup diced cucumber
- 1 tbsp finely chopped red onion
- 1 tbsp finely chopped mint and parsley
- 1 tbsp lemon juice
- 1 tbsp olive oil

- For the tahini sauce:
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp water

- 2 avocados, cut in half
- 1/2 cup hummus
